Egyptian Fresh Date Jam

Jams are an important item in the Egyptian pantry. Date jam is a delicious version, filled with flavors like cinnamon and cloves! This jam is amazing at breakfast with a piece of toast next to some fresh cream or at teatime, or as I like to do eaten on its own! The tangerine skins add an amazing memorable flavor because they turn into candied peels themselves which is another plus in my opinion.

The dates this Jam is made out are hard and fibrous and abundant in some cities of Egypt like Alexandria. They don not really turn into dried dates, so they are the perfect candidates for this jam because they are not really consumed otherwise. It can be made from any type of yellow fresh dates but the texture loaf these hard dates are amazing and I hope you are lucky to get your hands on some of them. They have a pinkish hue to them which turns the jam to a deep crimson when it is done. It is amazing in every sense of the word and absolutely unique!

Ingredients:

1 kg. Fresh dates peeled with peeler to ease the process.

3/4 kg. Sugar

2 sticks cinnamon 3 cm long

4 cloves

2 tbs. cut tangerine peel with the white part inside removed

1/4 c. Lemon juice

Almonds (optional)

Instructions:

-Peel the dates with the peeler to ease the process. Cut them up and remove the seeds. -If you are going to stuff it with almonds do as follow, you can boil them in a little bit of water until a little tender. But keep the boiling water. Using a long wooden skewer, remove the seed and stuff each date with an almond then return to the boiling water in a heavy saucepan.

-Add the rest of the ingredients and place the pan on low heat and let it simmer until the liquid is reduced, thickened and darkened in color.

المقادير:

كيلو بلح مقشر بالقشاره

٣/٤ كيلو سكر

٢ عود قرفه بطول ٣ سم

٤ قرنفل

٢ م ك قشر يوسفي مقطع للنكهه منزوع الطبقه البيضاء الداخليه

١/٤ كوب عصير ليمون

لوز (اختياري)

الطريقه:

-نقشر البلح، تقشير البلح بالقشاره يُسهل عملية التقشير و نقطعه و نُزيل النواه.

-اذا اردنا حشو حبات البلح باللوز نقوم بسلق البلح في ماء قليل اولا مع الاحتفاظ بماء السلق، ثم نقوم بنزع النواه بعود خشب ووضع حبة لوز في مكانها. ثم نقوم بوضع البلح في ماء السلق مجدداً.

-نضع البلح المقشر مع السكر و القرفه و القرنفل و قشر اليوسفي و عصير الليمون في طنجره على نار هادئه حتى يطرى البلح و يبدأ محلول الماء و السكر بالتحول لقوام سميك و للون احمر غامق.
